I guess I'm more of a reviewer/improver.  I'm about macro efficiency. So I'm taking tending recipes and making some minor adjustments to get the macro's down as much as I can per serving while maintaining the spirit of the original recipe. I kept every ingredient and for the carbs down 3 more grams per serving..

Today I took Explorermomma recipe for Keto Jambalaya. 

There are so many keto influencers out there much more popular than I. But they are all doing the same thing. So I'm just taking already popular recipes and adjusting the macros. It should be about macro efficiency.

This recipe I'm posting first the original recipe for Low carb Jambalaya as made by Explorermomma.

I made a couple adjustments to lower the carb count even more and i'll post that recipe as well. Slight improvement if you are strict keto. Improvement on the carb not the taste haha.

Keto Jambalaya

Ingredients

  • 3 tbsp butter
  • 1 lb chicken breast, chopped into small chunks
  • 1 lb andouille sausage, thinly sliced in rounds
  • ½ cup diced celery
  • 1 cup chopped bell pepper
  • ¼ cup chopped onion
  • 1 tsp salt, (to taste)
  • ½ tsp black pepper
  • 2 cloves minced garlic
  • 1 cup chicken bone broth, (2 if you prefer it more like soup)
  • 1 14 oz. can fire-roasted tomatoes
  • 2 tbsp Creole seasoning (I use the Slap ya Mamma, I put it on everything.)
  • 1 tsp thyme, dried
  • 1 bay leaf
  • ¼ tsp cayenne pepper
  • 1 12 oz pkg riced cauliflower (or make your own)
  • 1 lb deveined and peeled shrimp
  • 1-2 chopped jalapeños (for extra spice), optional

Instructions for this recipe!

First of all, as I always say, get out all your ingredients and kitchen utensils. Second, use a large skillet or Dutch oven and melt the three tablespoons of butter. I prefer a Dutch oven simply because I tend to make a mess when I cook, and the Dutch oven gives you more room to work with this large recipe.
 
The first thing to go into the pot is the meat. When the butter’s melted, throw in the chicken pieces and round sausage slices. Now, stir it around with a spatula and cook it until it’s browned and cooked through. Then remove it from the pan and set aside in an extra bowl or on a plate.
 
Next, it’s time for the veggies! In the pot with the leftover butter and meat fat, put the celery, bell pepper, onion, garlic, salt, and black pepper to the pan to cook. It should take about 3-5 minutes or just until it’s all tender. Then, pour in the chicken bone broth and fire-roasted tomatoes.
 
Once that’s combined, go ahead and put in the other seasonings: Creole seasoning, thyme, cayenne pepper, bay leaf, and the jalapeño if using.

I made a couple adjustments to lower the carb count even more while maintaining flavor and texture. If you are strict Keto you will be able to appreciate this. I would also love to hear your opinion on how it tastes. I think it maintains the everything in the original pretty well. With a  couple minor adjustments.

I have been trying to figure out how I can be original with my content as there are so many Keto influencers. I do not claim to be one. I just like doing this.  So maybe I'll make this my MO. Taking already great tasting and macro efficient Keto recipes and getting that carb count down at least by 1 to 1.5 that would be great. Those numbers matter if you are strict keto heck even dirty keto.  With credit to the original of course.

  • 1 lb andouille sausage, thinly sliced in rounds

  • 2 tbsp chopped onion (reduce from ¼ cup ¼ cup = 4 tbsp )
  • 1 tsp salt, (to taste)
  • ½ tsp black pepper
  • 2 cloves minced garlic
  • 1 cup chicken bone broth, (2 if you prefer it more like soup)
  • 1 small can (8 oz) fire-roasted tomatoes or diced tomatoes (reduce from 14 oz can)
  • 2 tbsp Creole seasoning (I use the Slap ya Mamma, I put it on everything.)
  • 1 tsp thyme, dried
  • 1 bay leaf
  • ¼ tsp cayenne pepper
  • 2 cups cauliflower rice (instead of 12 oz package)
  • 1 lb deveined and peeled shrimp
  • 1-2 chopped jalapeños (for extra spice), optional (I prefer pickled Jalapenos as they are slightly lower in calories and but you sacrifice texture)

The changes I made with this recipe to reduce the carb count by a factor of 3. For a total of  3 carbs per serving.


I added an extra 1/2 cup of celery in as I removed 1 cup of cauliflower rice and also reduced the fire -roasted tomatoes by another 4 oz's

I also substituted the fresh jalapenos with pickled sliced jalapenos. Not a significant change this is only my preference.

This maintained the flavor of the original. I thought pretty well. The revised nutritional information for this recipe is as follows.

  • Total Carbohydrate: 3 g (Reduced from 6 g)
  • Dietary Fiber: 1 g (No change)
  • Sugars: 2 g (No change)
  • Net Carbs: 2 g (Reduced from 5 g)
If you like this version of this recipe and can appreciate what I'm trying to do with improving on the carb per serving. I'm not in any way trying to change any of these recipes as they are perfect the way they are. However I believe with some good tweaks and adjustments they can be improved upon for macro efficiency
